Description
A light and refreshing grilled salmon salad with mixed greens, fresh vegetables, and a tangy lemon Dijon vinaigrette.

- 2 salmon fillets (6–8 oz each)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 5 oz mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 1/2 avocado, diced
- 1/4 cup crumbled feta cheese (optional)
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together 1 tbsp olive oil, smoked paprika, garlic powder, salt, and pepper.
- Rub the mixture evenly over both sides of the salmon fillets.
- Place salmon fillets on the grill and cook for 4-6 minutes per side, or until cooked through.
- While salmon is grilling, combine mixed greens, cherry tomatoes, cucumber, and red onion in a large bowl.
- In a small jar, combine 3 tbsp olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Shake well until emulsified.
- Once the salmon is cooked, let it rest for a few minutes before flaking it into bite-sized pieces.
- Add salmon and avocado to the salad bowl.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Sprinkle with feta cheese (if using) and serve immediately.
