Description

A light and refreshing grilled salmon salad with mixed greens, fresh vegetables, and a tangy lemon Dijon vinaigrette.


Ingredients

  • 2 salmon fillets (68 oz each)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 5 oz mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, diced
  • 1/4 cup crumbled feta cheese (optional)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, whisk together 1 tbsp olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Rub the mixture evenly over both sides of the salmon fillets.
  4. Place salmon fillets on the grill and cook for 4-6 minutes per side, or until cooked through.
  5. While salmon is grilling, combine mixed greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  6. In a small jar, combine 3 tbsp olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Shake well until emulsified.
  7. Once the salmon is cooked, let it rest for a few minutes before flaking it into bite-sized pieces.
  8. Add salmon and avocado to the salad bowl.
  9. Drizzle the vinaigrette over the salad and toss gently to combine.
  10. Sprinkle with feta cheese (if using) and serve immediately.
