  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced
  • 8 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup crumbled feta cheese (optional)
  • Avocado slices (optional)

Instructions

  1. 1. In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
  2. 2. Preheat your grill to medium high heat. Grill the shrimp for 2 3 minutes per side, or until they are pink and opaque.
  3. 3. While the shrimp is grilling, prepare the sauce. In a small bowl, mix together the Greek yogurt, lime juice, cilantro, minced garlic, salt, and pepper.
  4. 4. Warm the tortillas in a microwave or on a dry skillet for a few seconds until they are pliable.
  5. 5. Spread a spoonful of the sauce on each tortilla. Add lettuce, red onion, bell pepper, and grilled shrimp. Top with feta cheese and avocado slices, if desired.
  6. 6. Fold the sides of the tortilla inward, then roll it up tightly. Serve immediately.
