- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1/2 cup Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon chopped cilantro
- 1 clove garlic, minced
- 8 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper (any color)
- 1/4 cup crumbled feta cheese (optional)
- Avocado slices (optional)
Instructions
- 1. In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
- 2. Preheat your grill to medium high heat. Grill the shrimp for 2 3 minutes per side, or until they are pink and opaque.
- 3. While the shrimp is grilling, prepare the sauce. In a small bowl, mix together the Greek yogurt, lime juice, cilantro, minced garlic, salt, and pepper.
- 4. Warm the tortillas in a microwave or on a dry skillet for a few seconds until they are pliable.
- 5. Spread a spoonful of the sauce on each tortilla. Add lettuce, red onion, bell pepper, and grilled shrimp. Top with feta cheese and avocado slices, if desired.
- 6. Fold the sides of the tortilla inward, then roll it up tightly. Serve immediately.
