Description
Grilled turkey pasta is the perfect weeknight meal with tender grilled turkey, perfectly cooked pasta, and a light lemon herb sauce this is sure to please.

- 1 pound turkey breast, cut into 1-inch thick slices
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 pound pasta (penne, rotini, or farfalle work well)
- 8 ounces cherry tomatoes, halved
- 1 red bell pepper, sliced
- 1/2 cup Kalamata olives, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and pepper to taste
Instructions
- In a bowl, toss the turkey slices with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Preheat your grill to medium heat. Grill the turkey slices for 4-5 minutes per side.
- Cook the pasta according to package directions. Drain, reserve 1/2 cup pasta water.
- In a large skillet, heat olive oil over medium heat.
- Add the cherry tomatoes and bell pepper and cook for 5-7 minutes.
- Add the minced garlic to the skillet and cook for another minute.
- Stir in the lemon juice, lemon zest, and Parmesan cheese.
- Add the cooked pasta, grilled turkey, olives, parsley, and basil to the skillet.
- Toss to combine. If sauce is too thick, add a little pasta water. Serve immediately, garnished with extra Parmesan cheese.
