Description

Grilled turkey pasta is the perfect weeknight meal with tender grilled turkey, perfectly cooked pasta, and a light lemon herb sauce this is sure to please.


Ingredients

  • 1 pound turkey breast, cut into 1-inch thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 pound pasta (penne, rotini, or farfalle work well)
  • 8 ounces cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss the turkey slices with olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Preheat your grill to medium heat. Grill the turkey slices for 4-5 minutes per side.
  3. Cook the pasta according to package directions. Drain, reserve 1/2 cup pasta water.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add the cherry tomatoes and bell pepper and cook for 5-7 minutes.
  6. Add the minced garlic to the skillet and cook for another minute.
  7. Stir in the lemon juice, lemon zest, and Parmesan cheese.
  8. Add the cooked pasta, grilled turkey, olives, parsley, and basil to the skillet.
  9. Toss to combine. If sauce is too thick, add a little pasta water. Serve immediately, garnished with extra Parmesan cheese.
