  • 2 tablespoons olive oil
  • 1 pound cooked turkey, cut into 1 inch cubes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 pound Yukon Gold potatoes, peeled and cubed
  • 1 cup frozen peas
  • Chopped fresh parsley for garnish

Instructions

  1. In a large bowl, toss the cubed turkey with 2 tablespoons of olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Preheat your grill to medium heat. Grill the turkey for 5-7 minutes, turning occasionally, until lightly charred and heated through.
  3. In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened, about 5-7 minutes.
  4. Add the minced garlic, dried thyme, and dried rosemary to the pot and cook for 1 minute more, until fragrant.
  5. Pour in the chicken broth and diced tomatoes. Add the bay leaf. Bring to a simmer.
  6. Add the cubed potatoes and simmer for 15-20 minutes, or until the potatoes are tender.
  7. Stir in the grilled turkey and frozen peas. Cook for another 5 minutes, until the peas are heated through.
  8. Remove the bay leaf. Season with salt and pepper to taste. Garnish with chopped fresh parsley.
