- 2 cups chopped romaine lettuce
- 2 cups chopped iceberg lettuce
- 1 grilled chicken breast, sliced (or turkey slices or chickpeas)
- ½ cup cherry tomatoes, diced
- ½ cup cucumber, diced
- 1 avocado, diced
- 2 tbsp sunflower seeds
- ¼ cup shredded mozzarella (optional)
- ¼ cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- Salt and black pepper, to taste
Instructions
- Finely chop the romaine and iceberg lettuce.
- Dice tomatoes, cucumber, and avocado.
- Slice grilled chicken or turkey, or drain chickpeas.
- Whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper.
- Combine greens, protein, and toppings in a bowl.
- Drizzle dressing and toss to coat evenly.
- Transfer to serving plates; garnish with sunflower seeds or mozzarella.
Notes
• Swap mozzarella for nutritional yeast and balsamic for lemon‑tahini to go dairy‑free. • Use grilled salmon or eggs instead of chickpeas for a low‑carb version. • Marinate chickpeas in vinegar for La Scala authenticity. • Start with minimal dressing and adjust to taste.
