  • 1 ½ cups all purpose flour
  • ½ cup rolled oats
  • ½ cup packed light brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (1 ½ sticks) cold unsalted butter, cut into cubes
  • For the Filling:
  • 8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. 1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. 2. Make the Base: In a large bowl, whisk together the flour, oats, brown sugar, baking soda, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. 3. Press the Crust: Press half of the oat mixture into the bottom of the prepared baking pan to form an even crust.
  4. 4. Prepare the Filling: In a separate bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Beat in the egg and vanilla extract until well combined.
  5. 5. Assemble the Bars: Spread the cream cheese filling evenly over the crust. Sprinkle the mixed berries over the filling. Crumble the remaining oat mixture over the berries.
  6. 6. Bake: Bake for 30-35 minutes, or until the top is golden brown and the filling is set. A toothpick inserted into the center should come out clean.
  7. 7. Cool and Cut: Let the bars cool completely in the pan before cutting into squares. This will help them hold their shape.
