- For the Base:
- 1 ½ cups all purpose flour
- ½ cup rolled oats
- ½ cup packed light brown sugar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup (1 ½ sticks) cold unsalted butter, cut into cubes
- For the Filling:
- 8 ounces cream cheese, softened
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
- 1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- 2. Make the Base: In a large bowl, whisk together the flour, oats, brown sugar, baking soda, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- 3. Press the Crust: Press half of the oat mixture into the bottom of the prepared baking pan to form an even crust.
- 4. Prepare the Filling: In a separate bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Beat in the egg and vanilla extract until well combined.
- 5. Assemble the Bars: Spread the cream cheese filling evenly over the crust. Sprinkle the mixed berries over the filling. Crumble the remaining oat mixture over the berries.
- 6. Bake: Bake for 30-35 minutes, or until the top is golden brown and the filling is set. A toothpick inserted into the center should come out clean.
- 7. Cool and Cut: Let the bars cool completely in the pan before cutting into squares. This will help them hold their shape.
