- Preheat your oven to 350°F (175°C).nIn a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan.nBake the crust for 8-10 minutes, or until lightly golden brown. Let it cool slightly.nIn a large bowl, beat softened cream cheese and granulated sugar until smooth and creamy.nAdd vanilla extract and eggs, one at a time, beating well after each addition.nStir in sour cream until just combined. Be careful not to overmix.nPour the cream cheese filling over the prepared crust.nBake for 45-50 minutes, or until the center is just slightly jiggly.nTurn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour. This helps prevent cracking.nRemove from the oven and let cool completely on a wire rack.nRefrigerate for at least 4 hours or preferably overnight before serving.nTop with fresh berries, whipped cream, lemon zest, or chocolate shavings as desired.
