Instructions

  1. Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9 inch springform pan.
  2. Make the Cheesecake Filling: In a large bowl, beat softened cream cheese and granulated sugar with an electric mixer until smooth and creamy.
  3. Add Flavor: Stir in vanilla extract and lemon zest (if using).
  4. Whip the Cream: In a separate bowl, whip cold heavy cream until stiff peaks form.
  5. Combine the Filling and Cream: Gently fold the whipped cream into the cream cheese mixture until well combined. If using Mascarpone add now gently.
  6. Pour the Filling: Pour the cheesecake filling over the graham cracker crust in the springform pan. Spread evenly.
  7. Chill: Cover the pan with plastic wrap and chill in the refrigerator for at least 4 hours, or preferably overnight, to allow the cheesecake to set properly.
  8. Garnish and Serve: Before serving, carefully release the sides of the springform pan. Top with fresh berries, fruit preserves, honey, or your favorite toppings. Slice and serve cold.
