Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup beef broth
  • 1 cup long grain rice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions, avocado

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium high heat. Drain off any excess grease.
  2. Add the chopped onion and bell pepper to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced tomatoes, kidney beans, corn, beef broth, rice, chili powder, cumin, smoked paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 to 25 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove from heat and let stand for 5 minutes before fluffing with a fork.
  6. Serve hot with your favorite toppings.
