- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 cup beef broth
- 1 cup long grain rice
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, green onions, avocado
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium high heat. Drain off any excess grease.
- Add the chopped onion and bell pepper to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Stir in the diced tomatoes, kidney beans, corn, beef broth, rice, chili powder, cumin, smoked paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 to 25 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let stand for 5 minutes before fluffing with a fork.
- Serve hot with your favorite toppings.
