One Pot Beef Soup: Easiest Recipe EVER!

Description

Easy and comforting one pot beef soup recipe. Tender beef, vegetables, and rich broth all cooked together in one pot for a delicious and satisfying meal.


Ingredients

  • 1 tablespoon olive oil
  • 1.5 pound beef stew meat, cut into 1 inch cubes
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 2 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 pound Yukon gold potatoes, peeled and cubed
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium high heat. Season beef cubes with salt and pepper. Brown the beef in batches, being careful not to overcrowd the pot. Remove the beef and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Pour in beef broth and scrape the bottom of the pot to loosen any browned bits. Add diced tomatoes, dried thyme, dried rosemary, and bay leaf.
  4. Return the browned beef to the pot and bring to a simmer. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  5. Add chopped carrots, celery, and cubed potatoes to the pot. Continue to simmer for another 20 to 25 minutes, or until the vegetables are tender.
  6. Stir in frozen peas during the last 5 minutes of cooking time. Season with salt and pepper to taste.
  7. Remove bay leaf before serving. Garnish with fresh parsley, if desired.
