  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can enchilada sauce
  • 1 packet taco seasoning
  • 1/2 cup beef broth
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • 12 flour tortillas, warmed
  • Shredded cheddar cheese
  • Sour cream
  • Guacamole
  • Salsa

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Then, stir in the minced garlic and red bell pepper and cook for another 2 minutes.
  3. Pour in the diced tomatoes (undrained), enchilada sauce, taco seasoning, and beef broth. Stir well to combine all of the ingredients.
  4. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the sauce has thickened slightly and the flavors have melded together beautifully.
  5. Stir in the chopped cilantro. Season with salt and pepper to taste.
  6. Warm the flour tortillas according to package directions.
  7. To assemble the wraps, spoon a generous amount of the beef mixture onto each tortilla. Top with shredded cheddar cheese, sour cream, and guacamole, if desired. Fold and serve immediately.
