- 1.5 lbs ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can enchilada sauce
- 1 packet taco seasoning
- 1/2 cup beef broth
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 12 flour tortillas, warmed
- Shredded cheddar cheese
- Sour cream
- Guacamole
- Salsa
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium high heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes. Then, stir in the minced garlic and red bell pepper and cook for another 2 minutes.
- Pour in the diced tomatoes (undrained), enchilada sauce, taco seasoning, and beef broth. Stir well to combine all of the ingredients.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the sauce has thickened slightly and the flavors have melded together beautifully.
- Stir in the chopped cilantro. Season with salt and pepper to taste.
- Warm the flour tortillas according to package directions.
- To assemble the wraps, spoon a generous amount of the beef mixture onto each tortilla. Top with shredded cheddar cheese, sour cream, and guacamole, if desired. Fold and serve immediately.
