Description
This one pot chicken bowl is the perfect weeknight meal! Tender chicken, flavorful rice, and your favorite veggies all cooked together in one pot for easy cleanup.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup long grain rice, rinsed
- 2 cups chicken broth
- 1 cup mixed vegetables (such as broccoli florets, chopped carrots, and peas)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional toppings: chopped green onions, sesame seeds, sriracha
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
- Add onion to the pot and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Stir in rice, chicken broth, mixed vegetables, salt, and pepper. Bring to a boil.
- Return chicken to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked through and liquid is absorbed.
- Let stand for 5 minutes before fluffing with a fork.
- Serve hot, topped with chopped green onions, sesame seeds, and sriracha, if desired.
