One Pot Chicken Bowl: Easy Weeknight Dinner (30 Minutes!)

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

This one pot chicken bowl is the perfect weeknight meal! Tender chicken, flavorful rice, and your favorite veggies all cooked together in one pot for easy cleanup.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain rice, rinsed
  • 2 cups chicken broth
  • 1 cup mixed vegetables (such as broccoli florets, chopped carrots, and peas)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped green onions, sesame seeds, sriracha

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  3. Add onion to the pot and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  4. Stir in rice, chicken broth, mixed vegetables, salt, and pepper. Bring to a boil.
  5. Return chicken to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked through and liquid is absorbed.
  6. Let stand for 5 minutes before fluffing with a fork.
  7. Serve hot, topped with chopped green onions, sesame seeds, and sriracha, if desired.
