Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound pasta of your choice (penne, rotini, or farfalle work well)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt, more to taste
  • 1/2 teaspoon black pepper, more to taste
  • Optional: 1 cup chopped vegetables, such as broccoli, spinach, or mushrooms

Instructions

  1. Heat the olive oil and butter in a large pot or Dutch oven over medium-high heat. Add the chopped onion and cook until softened, about 3 minutes. Add garlic and cook for 1 minute until fragrant.
  2. Add the bite-sized chicken pieces to the pot and cook until browned on all sides.
  3. Pour in the chicken broth and bring to a boil. Add the pasta, Italian seasoning, salt, and pepper. Stir well to ensure the pasta is submerged.
  4. Reduce the heat to medium-low, cover the pot, and simmer for 15-20 minutes, or until the pasta is cooked through and the chicken is cooked. Stir occasionally to prevent sticking.
  5. Remove the pot from the heat and stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy. If using vegetables, stir them in now and let them wilt from the residual heat.
  6. Taste and adjust the seasoning as needed. Add more salt and pepper to taste. Serve hot and enjoy!
