Quick and easy one pot chicken pasta recipe perfect for busy weeknights.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces pasta (penne, rotini, or your favorite shape)
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for garnish
- Fresh basil leaves, for garnish (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
- Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Stir in pasta, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 12 minutes, or until pasta is cooked through.
- Return chicken to the pot. Stir in frozen peas, heavy cream, and Parmesan cheese. Cook for 2 minutes more, until heated through.
- Garnish with fresh basil leaves and extra Parmesan cheese, if desired. Serve immediately.
