Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces pasta (penne, rotini, or your favorite shape)
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Stir in pasta, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 12 minutes, or until pasta is cooked through.
  4. Return chicken to the pot. Stir in frozen peas, heavy cream, and Parmesan cheese. Cook for 2 minutes more, until heated through.
  5. Garnish with fresh basil leaves and extra Parmesan cheese, if desired. Serve immediately.
