Description

  • 1 pound cod fillets, cut into 1-inch pieces
  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Lemon wedges for serving

Instructions

  1. 1. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté the chopped onion until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. 2. Add the chicken broth, pasta, salt, pepper, and red pepper flakes (if using) to the pot. Bring to a boil, then reduce heat to a simmer.
  3. 3. Cook, uncovered, for the time indicated on the pasta package, stirring occasionally, until the pasta is almost cooked through but still has a slight bite. The pasta will absorb most of the liquid.
  4. 4. Gently stir in the cod pieces. Cover the pot and cook for about 5 minutes or until the cod is cooked through and flakes easily with a fork. Cooking time may vary depending on the thickness of the cod.
  5. 5. Remove the pot from the heat. Stir in the heavy cream, Parmesan cheese, and parsley. Taste and adjust seasonings as needed.
  6. 6. Serve immediately with lemon wedges.
