Description
This easy one pot cod pasta is a delicious and quick weeknight meal. Flaky cod, tender pasta, and a creamy sauce all cook together in one pot for easy cleanup!

- 1 pound cod fillets, cut into 1-inch pieces
- 1 pound pasta (penne, rotini, or your favorite shape)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Lemon wedges for serving
Instructions
- 1. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté the chopped onion until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- 2. Add the chicken broth, pasta, salt, pepper, and red pepper flakes (if using) to the pot. Bring to a boil, then reduce heat to a simmer.
- 3. Cook, uncovered, for the time indicated on the pasta package, stirring occasionally, until the pasta is almost cooked through but still has a slight bite. The pasta will absorb most of the liquid.
- 4. Gently stir in the cod pieces. Cover the pot and cook for about 5 minutes or until the cod is cooked through and flakes easily with a fork. Cooking time may vary depending on the thickness of the cod.
- 5. Remove the pot from the heat. Stir in the heavy cream, Parmesan cheese, and parsley. Taste and adjust seasonings as needed.
- 6. Serve immediately with lemon wedges.
