One Pot Cod Stew: Easiest Recipe Ever!

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups fish broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 pound Yukon Gold potatoes, peeled and cubed
  • 1.5 pounds cod fillets, cut into 2 inch pieces
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add the garlic, thyme, smoked paprika, and red pepper flakes (if using) and cook for another minute until fragrant.
  3. Pour in the fish broth and diced tomatoes. Add the potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Gently stir in the cod pieces and the frozen peas. Cook for another 5-7 minutes, or until the cod is cooked through and flakes easily with a fork. Be careful not to overcook the cod.
  5. Stir in the fresh parsley. Season with salt and freshly ground black pepper to taste.
  6. Serve hot with lemon wedges for squeezing over the stew..
