A hearty and flavorful one pot cod stew recipe with fresh cod, potatoes, vegetables, and a delicious broth. Perfect for a comforting and easy weeknight dinner.

- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups fish broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 pound Yukon Gold potatoes, peeled and cubed
- 1.5 pounds cod fillets, cut into 2 inch pieces
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
- Lemon wedges for serving
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add the garlic, thyme, smoked paprika, and red pepper flakes (if using) and cook for another minute until fragrant.
- Pour in the fish broth and diced tomatoes. Add the potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Gently stir in the cod pieces and the frozen peas. Cook for another 5-7 minutes, or until the cod is cooked through and flakes easily with a fork. Be careful not to overcook the cod.
- Stir in the fresh parsley. Season with salt and freshly ground black pepper to taste.
