Easy and delicious one pot salmon tacos with rice, spices and your favorite toppings. A quick weeknight meal with minimal cleanup.

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 jalapeño, seeded and minced (optional)
- 1 cup long grain rice, rinsed
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cumin
- 1 pound salmon fillet, skin removed and cut into 1-inch cubes
- 1/2 cup frozen corn
- 1/4 cup chopped cilantro
- Juice of 1 lime
- Salt and pepper to taste
- Tortillas, for serving
- Optional toppings: avocado, sour cream, shredded cabbage, salsa
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, bell pepper, and jalapeño (if using) and cook until softened, about 5 minutes.
- Stir in the rice, chicken broth, chili powder, smoked paprika, and cumin. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Gently stir in the salmon and corn. Cover and cook for another 5 to 7 minutes, or until the salmon is cooked through and flakes easily with a fork and the rice is tender.
- Remove from heat and stir in the cilantro and lime juice. Season with salt and pepper to taste.
- Warm the tortillas according to package directions.
- Serve the salmon mixture in the warm tortillas with your favorite toppings.
