- 1 pound salmon fillet, skin removed, cut into 1 inch cubes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 medium bell pepper (any color), chopped
- 1 cup frozen or canned corn, drained
- 1 cup canned black beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 tablespoons taco seasoning
- 1 cup chicken broth
- 2 tablespoons lime juice
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Corn or flour taco shells, warmed
- Shredded lettuce, salsa, sour cream, cheese, avocado for toppings
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and bell pepper and cook until softened, about 5 minutes.
- Stir in corn and black beans and cook for another 2 minutes.
- Add diced tomatoes, taco seasoning, chicken broth, and lime juice to the pot. Bring to a simmer.
- Gently stir in the cubed salmon. Cover the pot and cook until the salmon is cooked through and flakes easily with a fork, about 5 to 7 minutes.
- Season with salt and pepper to taste.
- Stir in chopped cilantro.
- Warm taco shells according to package directions.
- Spoon the salmon mixture into the taco shells and add your favorite toppings.
