- 1 pound shrimp, peeled and deveined
- 1 cup long-grain white rice
- 4 cups chicken or vegetable broth
- 1 cup broccoli florets
- 1/2 cup sliced carrots
- 1/2 cup chopped bell pepper
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley or cilantro, chopped, for garnish
- Lemon wedges, for serving
Instructions
- In a large pot or Dutch oven, combine rice, broth, onion, garlic, paprika, garlic powder, and red pepper flakes (if using). Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is almost cooked, but there’s still some liquid in the pot.
- Add broccoli and carrots to the pot. Cover and cook for 5 minutes, or until the vegetables are tender-crisp.
- Gently stir in the shrimp and bell pepper. Cook for 3 to 5 minutes, or until the shrimp is pink and cooked through.
- Remove from heat and let stand for a few minutes to allow the flavors to meld.
- Garnish with fresh parsley or cilantro and serve with lemon wedges for squeezing.
