  • 1 pound shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 4 cups chicken or vegetable broth
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a large pot or Dutch oven, combine rice, broth, onion, garlic, paprika, garlic powder, and red pepper flakes (if using). Season with salt and pepper.
  2. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is almost cooked, but there’s still some liquid in the pot.
  3. Add broccoli and carrots to the pot. Cover and cook for 5 minutes, or until the vegetables are tender-crisp.
  4. Gently stir in the shrimp and bell pepper. Cook for 3 to 5 minutes, or until the shrimp is pink and cooked through.
  5. Remove from heat and let stand for a few minutes to allow the flavors to meld.
  6. Garnish with fresh parsley or cilantro and serve with lemon wedges for squeezing.
