One Pot Shrimp Pasta: The Easiest 30-Minute Recipe

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound pasta (linguine, spaghetti, or fettuccine work well)
  • 1 (28 ounce) can crushed tomatoes
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine (optional)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Stir in the garlic and red pepper flakes (if using) and cook for another minute until fragrant.
  2. Pour in the crushed tomatoes and white wine (if using). Bring to a simmer and cook for 5 minutes, stirring occasionally.
  3. Add the chicken or vegetable broth and bring to a boil. Break the pasta in half, if needed, and add it to the pot. Make sure the pasta is submerged in the liquid.
  4. Reduce heat to low, cover, and simmer for the time indicated on your pasta package, about 10 to 12 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent the pasta from sticking to the bottom of the pot.
  5. In the last 3 to 4 minutes of cooking, add the shrimp to the pot. Stir well, making sure all the shrimp are submerged in the sauce. Cook until the shrimp are pink and opaque, about 3 to 4 minutes.
  6. Remove from heat and stir in the fresh basil and parsley. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with grated Parmesan cheese.
