- 1 tablespoon olive oil
- 1 pound medium shrimp, peeled and deveined
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup long grain rice
- 2 cups chicken broth
- 1/2 cup frozen peas
- 1/4 cup chopped fresh parsley
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lemon wedges, for serving (optional)
- Red pepper flakes, for serving (optional)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
- Add the rice, chicken broth, paprika, salt, and pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Stir in the shrimp and frozen peas. Cover and cook until the shrimp is pink and cooked through and the peas are tender, about 5 minutes.
- Remove from heat and stir in the parsley.
- Serve immediately with lemon wedges, if desired.
