  • 1 tablespoon olive oil
  • 1 pound medium shrimp, peeled and deveined
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving (optional)
  • Red pepper flakes, for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  2. Add the rice, chicken broth, paprika, salt, and pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Stir in the shrimp and frozen peas. Cover and cook until the shrimp is pink and cooked through and the peas are tender, about 5 minutes.
  4. Remove from heat and stir in the parsley.
  5. Serve immediately with lemon wedges, if desired.
