- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup milk
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked turkey, cubed
- 1 (10 ounce) package frozen mixed vegetables
- 1 cup uncooked pasta (rotini or medium shells work well)
- 1/2 cup shredded cheddar cheese, for topping
Instructions
- Heat oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
- Stir in soups, milk, and broth. Season with thyme, salt, and pepper. Bring to a simmer.
- Add turkey, vegetables, and uncooked pasta. Stir well.
- Reduce heat, cover, and simmer for 15-20 minutes, or until pasta is cooked. Stir occasionally.
- Remove from heat, sprinkle with cheese, and cover until melted. Serve hot.
