Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 pound pasta (penne, rotini, or your favorite short shape)
  • 1 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  3. Stir in crushed tomatoes, chicken broth, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  4. Bring the mixture to a boil, then add pasta. Reduce heat to low, cover, and simmer for 12-15 minutes, or until pasta is cooked through and liquid is absorbed. Be sure to stir occasionally to prevent sticking.
  5. Stir in frozen peas and Parmesan cheese. Cook for another minute or two until peas are heated through and cheese is melted.
  6. Serve immediately.
