A quick and easy one pot turkey rice bowl that’s perfect for weeknight dinners. Flavorful, satisfying, and requires minimal cleanup!

- 1 pound ground turkey
- 1 cup long grain rice, rinsed
- 3 cups chicken broth (low sodium)
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 cup frozen corn
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh parsley, shredded cheese, hot sauce (optional toppings)
Instructions
- Heat olive oil in a pot over medium heat. Cook turkey, breaking it.
- Add onion, carrots, celery; cook 5-7 minutes.
- Stir in garlic, thyme, rosemary; cook 1 minute.
- Add rice and chicken broth; bring to boil, reduce heat, cover and simmer 20 minutes.
- Stir in peas and corn; cook 2-3 minutes.
- Season with salt and pepper.
- Serve hot with parsley,cheese, or hot sauce.
