Ingredients

  • 1 pound ground turkey
  • 1 cup long grain rice, rinsed
  • 3 cups chicken broth (low sodium)
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, shredded cheese, hot sauce (optional toppings)

Instructions

  1. Heat olive oil in a pot over medium heat. Cook turkey, breaking it.
  2. Add onion, carrots, celery; cook 5-7 minutes.
  3. Stir in garlic, thyme, rosemary; cook 1 minute.
  4. Add rice and chicken broth; bring to boil, reduce heat, cover and simmer 20 minutes.
  5. Stir in peas and corn; cook 2-3 minutes.
  6. Season with salt and pepper.
  7. Serve hot with parsley,cheese, or hot sauce.
