Ingredients

  • 1 pound pasta (rotini, penne, or elbow macaroni)
  • 6 cups chicken broth
  • 2 cups cooked turkey, cubed
  • 1 cup frozen peas
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Combine pasta and chicken broth in a large pot. Bring to a boil, then reduce heat and simmer for 8-10 minutes, until pasta is cooked.
  2. Stir in turkey and peas. Cook for 2-3 minutes, or until peas are heated through.
  3. In a bowl, whisk together mayonnaise, sour cream, Dijon mustard, and lemon juice.
  4. Pour dressing over pasta mixture and stir well.
  5. Add celery, red onion, and parsley, then stir to combine.
  6. Season with salt and pepper to taste.
