  • 6 cups vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Optional: fresh mint for garnish

Instructions

  1. Rinse the split peas thoroughly under cold water.
  2. In a large pot or Dutch oven, sauté the chopped onion in butter or olive oil over medium heat until softened (about 5 minutes). Then, add the minced garlic and cook for another minute until fragrant.
  3. Add the rinsed split peas and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the peas are very tender and easily mashed. Stir occasionally to prevent sticking.
  4. Once the peas are cooked, remove the pot from the heat. Use an immersion blender or a regular blender (in batches) to blend the peas pudding until smooth and creamy. Be very careful when blending hot liquids.
  5. Return the blended peas pudding to the pot. Season with salt and pepper to taste. Simmer for another 5 minutes to allow the flavors to meld together.
  6. Serve hot, garnished with fresh mint (optional).
