Description
A comforting and flavorful peas pudding recipe made with dried split peas, vegetable broth, and simple seasonings. Perfect as a side dish or light meal.
Ingredients
Scale
- 1 pound dried split peas
- 6 cups vegetable broth
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper (or to taste)
- Optional: fresh mint for garnish
Instructions
- Rinse the split peas thoroughly under cold water.
- In a large pot or Dutch oven, sauté the chopped onion in butter or olive oil over medium heat until softened (about 5 minutes). Then, add the minced garlic and cook for another minute until fragrant.
- Add the rinsed split peas and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the peas are very tender and easily mashed. Stir occasionally to prevent sticking.
- Once the peas are cooked, remove the pot from the heat. Use an immersion blender or a regular blender (in batches) to blend the peas pudding until smooth and creamy. Be very careful when blending hot liquids.
- Return the blended peas pudding to the pot. Season with salt and pepper to taste. Simmer for another 5 minutes to allow the flavors to meld together.
- Serve hot, garnished with fresh mint (optional).
