Description

Effortless one pan chicken pasta with tender chicken, perfectly cooked pasta, and roasted vegetables in a creamy parmesan sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1 inch pieces
  • 1 lb penne pasta
  • 1 head broccoli, cut into florets
  • 2 bell peppers (any color), sliced
  • 1 pint cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1.5 cups chicken broth
  • ½ cup heavy cream
  • ½ cup parmesan cheese, grated

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken, pasta, broccoli, bell peppers, cherry tomatoes, and red onion with olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Spread mixture evenly onto a large sheet pan.
  4. Pour chicken broth evenly over the mixture.
  5. Bake for 30 35 minutes, or until pasta is cooked through and chicken is no longer pink. Stir halfway through cooking.
  6. Remove from oven and stir in heavy cream and parmesan cheese.
  7. Return to oven for 5 minutes, or until cheese is melted and bubbly.
  8. Let cool slightly before serving.
