- 1 pound cod fillets, skinless, cut into 2-inch piecesn1 pound pasta (penne, rotini, or farfalle work well)n1 red bell pepper, choppedn1 yellow bell pepper, choppedn1 zucchini, choppedn1 red onion, thinly slicedn2 cups cherry tomatoes, halvedn4 cloves garlic, mincedn1/4 cup olive oiln1/4 cup lemon juicen2 tablespoons chopped fresh parsleyn2 tablespoons chopped fresh basiln1 teaspoon dried oreganon1/2 teaspoon saltn1/4 teaspoon black peppernGrated Parmesan cheese, for serving (optional)
Instructions
- Preheat oven to 400 degrees F (200 degrees C).nIn a large bowl, combine bell peppers, zucchini, red onion, cherry tomatoes, and garlic.nDrizzle with 2 tablespoons of olive oil, oregano, salt, and pepper. Toss to coat.nSpread vegetables on a large sheet pan.nAdd dry pasta to the sheet pan, nestling it amongst the vegetables.nPour 3 cups of water over the pasta and vegetables.nPlace cod pieces on top. Drizzle with remaining olive oil, salt, and pepper.nBake for 20-25 minutes, or until cod is cooked and pasta is tender.nStir gently to combine everything on the pan.nWhisk together lemon juice, parsley, and basil. Pour over the sheet pan cod pasta blend.nServe immediately, garnished with Parmesan cheese, if desired.
