Ingredients

  • 1 pound salmon fillet, cut into 4 portions
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 large flour tortillas
  • Avocado slices (optional)
  • Sour cream or Greek yogurt (optional)
  • Lime wedges (optional)
  • Cilantro, chopped (optional)
  • Your favorite hot sauce (optional)

Instructions

  1. 1. Preheat oven to 400°F (200°C). Grease a sheet pan.
  2. 2. Combine 1 tablespoon olive oil, paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
  3. 3. Place the salmon fillets on one side of the sheet pan. Brush with the spice mixture.
  4. 4. Toss the sliced bell peppers, red onion, and zucchini with 1 tablespoon olive oil, garlic powder, salt, and pepper. Spread on the other side of the pan.
  5. 5. Bake for 12 15 minutes, or until salmon is cooked through and vegetables are tender crisp.
  6. 6. Warm the tortillas.
  7. 7. Place vegetables and salmon on each tortilla.
  8. 8. Top with your favorite toppings.
  9. 9. Fold the sides of the tortilla inward and roll up tightly. Serve immediately.
