Easy and delicious sheet pan salmon wraps with roasted vegetables. A quick and healthy weeknight meal ready in under 30 minutes.

- 1 pound salmon fillet, cut into 4 portions
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 4 large flour tortillas
- Avocado slices (optional)
- Sour cream or Greek yogurt (optional)
- Lime wedges (optional)
- Cilantro, chopped (optional)
- Your favorite hot sauce (optional)
Instructions
- 1. Preheat oven to 400°F (200°C). Grease a sheet pan.
- 2. Combine 1 tablespoon olive oil, paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
- 3. Place the salmon fillets on one side of the sheet pan. Brush with the spice mixture.
- 4. Toss the sliced bell peppers, red onion, and zucchini with 1 tablespoon olive oil, garlic powder, salt, and pepper. Spread on the other side of the pan.
- 5. Bake for 12 15 minutes, or until salmon is cooked through and vegetables are tender crisp.
- 6. Warm the tortillas.
- 7. Place vegetables and salmon on each tortilla.
- 8. Top with your favorite toppings.
- 9. Fold the sides of the tortilla inward and roll up tightly. Serve immediately.
