  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, sliced
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooked rice or quinoa (optional)
  • Avocado, sliced (optional)
  • Salsa (optional)
  • Sour cream or Greek yogurt (optional)
  • Cilantro, chopped (optional)
  • Lime wedges (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. In a bowl, combine ground turkey, olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Spread seasoned turkey evenly across one side of the sheet pan.
  4. In a separate bowl, toss chopped bell peppers, zucchini, red onion, and broccoli florets with olive oil, salt, and pepper.
  5. Arrange vegetables on the other side of the sheet pan.
  6. Bake for 20-25 minutes, or until turkey is cooked and vegetables are tender.
  7. Remove from oven and let cool slightly.
  8. Serve over rice or quinoa with your favorite toppings.
