- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 red onion, sliced
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooked rice or quinoa (optional)
- Avocado, sliced (optional)
- Salsa (optional)
- Sour cream or Greek yogurt (optional)
- Cilantro, chopped (optional)
- Lime wedges (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- In a bowl, combine ground turkey, olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well.
- Spread seasoned turkey evenly across one side of the sheet pan.
- In a separate bowl, toss chopped bell peppers, zucchini, red onion, and broccoli florets with olive oil, salt, and pepper.
- Arrange vegetables on the other side of the sheet pan.
- Bake for 20-25 minutes, or until turkey is cooked and vegetables are tender.
- Remove from oven and let cool slightly.
- Serve over rice or quinoa with your favorite toppings.
