  • Salt and pepper to taste
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, sliced
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons sriracha
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Cooked quinoa or rice
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a sheet pan with parchment paper.
  3. Combine ground turkey with olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper.
  4. Toss vegetables with olive oil, salt, and pepper.
  5. Spread vegetables on the sheet pan and crumble turkey evenly over them.
  6. Bake for 20-25 minutes, stirring halfway through.
  7. Whisk together Greek yogurt, sriracha, lime juice, and honey for the sauce.
  8. Serve turkey and vegetables over rice or quinoa.
  9. Drizzle with the sriracha yogurt sauce and garnish with cilantro and lime.
