- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 1 red bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 zucchini, chopped
- 1 red onion, sliced
- 1 cup broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup plain Greek yogurt
- 2 tablespoons sriracha
- 1 tablespoon lime juice
- 1 teaspoon honey
- Cooked quinoa or rice
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Preheat oven to 400°F (200°C).
- Line a sheet pan with parchment paper.
- Combine ground turkey with olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper.
- Toss vegetables with olive oil, salt, and pepper.
- Spread vegetables on the sheet pan and crumble turkey evenly over them.
- Bake for 20-25 minutes, stirring halfway through.
- Whisk together Greek yogurt, sriracha, lime juice, and honey for the sauce.
- Serve turkey and vegetables over rice or quinoa.
- Drizzle with the sriracha yogurt sauce and garnish with cilantro and lime.
