An easy and flavorful sheet pan turkey rice bowl recipe perfect for busy weeknights. This one pan meal is customizable and made with ground turkey, brown rice, and your favorite vegetables.

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup chopped broccoli florets
- 1 cup chopped carrots
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup long grain rice, uncooked
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- Optional toppings: avocado slices, shredded cheese, sour cream, salsa, chopped cilantro, lime wedges
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large sheet pan.
- In a large bowl, combine the ground turkey, olive oil, chopped onion, minced garlic, red bell pepper, green bell pepper, chopped broccoli florets, chopped carrots and black beans.
- Add the uncooked rice, chicken broth, chili powder, cumin, and smoked paprika to the bowl. Season with salt and pepper to taste.
- Stir everything together until well combined.
- Spread the mixture evenly across the prepared sheet pan.
- Bake for 30 to 40 minutes, or until the rice is cooked through and the liquid is absorbed. Check halfway through and stir gently to prevent sticking.
- Remove from oven and let stand for 5 minutes before serving.
- Serve hot, topped with your favorite toppings such as avocado slices, shredded cheese, sour cream, salsa, chopped cilantro, and lime wedges.
