Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Cooked rice, for serving
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the chopped bell peppers, red onion, broccoli florets, and snap peas. Drizzle with olive oil and toss to coat. Spread the vegetables evenly on the prepared sheet pan.
  3. In the same bowl, combine the ground turkey, soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes (if using). Mix well until the turkey is evenly coated.
  4. Crumble the seasoned ground turkey over the vegetables on the sheet pan.
  5. Bake for 20-25 minutes, or until the ground turkey is cooked through and the vegetables are tender and slightly caramelized.
  6. While the turkey and vegetables are roasting, prepare your rice according to package directions.
  7. Once everything is cooked, spoon the cooked rice into bowls. Top with the sheet pan turkey and roasted vegetables.
  8. Garnish with sesame seeds and chopped green onions. Serve immediately and enjoy!
