- 1 large sweet potato, peeled and diced
- 1 red bell pepper, seeded and chopped
- 1 zucchini, chopped
- 1 red onion, chopped
- 2 cups cooked brown rice (or white rice)
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon ginger, minced
- 1 clove garlic, minced
Instructions
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a large bowl, combine sweet potato, bell pepper, zucchini, and red onion with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss to coat.
- Spread vegetables in a single layer on the sheet pan. Crumble ground turkey over the vegetables.
- Bake for 20-25 minutes, stirring halfway through, until turkey is cooked through and vegetables are tender.
- While baking, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic in a small bowl.
- Remove sheet pan from oven, add cooked rice, and toss to combine. Drizzle with sauce or serve on the side.
- Serve in bowls with toppings like sesame seeds, green onions, sriracha, avocado slices, and lime wedges.
