  • 1 large sweet potato, peeled and diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 tablespoon olive oil
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potato, carrots, celery, onion, garlic, and turkey cubes. Drizzle with olive oil and season with salt, pepper, thyme, and rosemary. Toss everything together until evenly coated.
  3. Spread the mixture in a single layer on a large sheet pan.
  4. Pour the diced tomatoes and chicken broth over the vegetables and turkey.
  5. Bake for 30 to 40 minutes, or until the turkey is cooked through and the vegetables are tender.
  6. Remove from the oven and let cool slightly.
  7. Garnish with fresh parsley, if desired, and serve warm.
