Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1 inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 12 ounces pasta (penne, rotini, or your favorite shape)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • ½ cup sun dried tomatoes, oil packed, drained
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium high heat. Season the chicken with salt, pepper, garlic powder, and paprika. Add the chicken to the skillet and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. Add the minced garlic and chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in sun dried tomatoes.
  3. Add the pasta and chicken broth to the skillet. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12-15 minutes, or until the pasta is cooked through and the liquid has been absorbed, stirring occasionally.
  4. Stir in the heavy cream and Parmesan cheese. Add the cooked chicken back to the skillet. Season with salt and pepper to taste.
  5. Garnish with fresh parsley and serve immediately.
