A quick and easy one pan skillet salmon stew recipe with salmon, vegetables, and aromatic herbs cooked in a savory broth.

- 1.5 pounds salmon fillets, skin on or off, cut into 1 inch pieces
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1/2 cup frozen peas
- 1/4 cup chopped fresh parsley, for garnish
- Lemon wedges, for serving (optional)
Instructions
- Heat olive oil in large skillet over medium heat. Add onion, garlic, bell pepper, carrots, celery. Cook 5-7 mins.
- Pour in chicken broth and diced tomatoes. Stir in thyme and smoked paprika. Season with salt and pepper. Simmer.
- Add salmon, reduce heat to low, cover and simmer for 5-7 minutes, or until salmon flakes easily (145°F).
- Stir in frozen peas, cook for 1-2 minutes.
- Garnish with parsley, serve with lemon wedges (optional).
