Ingredients

  • 1.5 pounds salmon fillets, skin on or off, cut into 1 inch pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley, for garnish
  • Lemon wedges, for serving (optional)

Instructions

  1. Heat olive oil in large skillet over medium heat. Add onion, garlic, bell pepper, carrots, celery. Cook 5-7 mins.
  2. Pour in chicken broth and diced tomatoes. Stir in thyme and smoked paprika. Season with salt and pepper. Simmer.
  3. Add salmon, reduce heat to low, cover and simmer for 5-7 minutes, or until salmon flakes easily (145°F).
  4. Stir in frozen peas, cook for 1-2 minutes.
  5. Garnish with parsley, serve with lemon wedges (optional).
