Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice (white, brown, or jasmine)
  • 1/2 cup frozen corn, thawed
  • 1/4 cup chopped cilantro, for garnish
  • Optional toppings: avocado, sour cream, shredded cheese, hot sauce

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey, onion, and bell pepper to the skillet. Cook, breaking up the turkey with a spoon, until the turkey is browned and the vegetables are softened, about 5-7 minutes.
  3. Stir in garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for another minute until fragrant.
  4. Pour in the diced tomatoes (undrained) and bring to a simmer.
  5. Stir in the cooked rice and frozen corn. Cook until heated through, about 2-3 minutes.
  6. Remove from heat and stir in the chopped cilantro.
  7. Serve immediately with your favorite toppings.
