- 1 tablespoon olive oil
- 1 pound ground turkey
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (any color)
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup cooked rice (white, brown, or jasmine)
- 1/2 cup frozen corn, thawed
- 1/4 cup chopped cilantro, for garnish
- Optional toppings: avocado, sour cream, shredded cheese, hot sauce
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey, onion, and bell pepper to the skillet. Cook, breaking up the turkey with a spoon, until the turkey is browned and the vegetables are softened, about 5-7 minutes.
- Stir in garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for another minute until fragrant.
- Pour in the diced tomatoes (undrained) and bring to a simmer.
- Stir in the cooked rice and frozen corn. Cook until heated through, about 2-3 minutes.
- Remove from heat and stir in the chopped cilantro.
- Serve immediately with your favorite toppings.
