Description

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 2 tablespoons)
  • 1/2 cup water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1/4 cup chopped cilantro
  • 12 taco shells (corn or flour, your preference)
  • Your favorite toppings: shredded cheese, sour cream, salsa, guacamole, lettuce, diced tomatoes, etc.

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add the ground turkey to the skillet and cook, breaking it apart with a spoon, until browned. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  4. Stir in the black beans, corn, and cilantro. Cook for another 2 minutes, until heated through.
  5. Warm the taco shells according to package directions.
  6. Fill each taco shell with the turkey mixture and your favorite toppings. Serve immediately.
