Description

Quick and easy skillet turkey wraps, perfect for a weeknight dinner! Seasoned ground turkey, black beans, and veggies cooked in one skillet, then wrapped in warm tortillas with cheese.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado, cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up, until browned. Drain excess grease.
  2. Add the chopped onion and bell pepper to the skillet with the turkey. Cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute.
  3. Add black beans, diced tomatoes and green chilies, chili powder, cumin, smoked paprika, salt, and pepper. Simmer for 5-10 minutes, stirring occasionally.
  4. Warm the tortillas in a microwave or dry skillet for a few seconds until pliable.
  5. Spoon the turkey mixture onto each tortilla, and top with shredded cheddar cheese.
  6. Fold in the sides of the tortilla, then roll it up tightly.
  7. Return the filled wraps to the skillet, seam side down. Cook for about 2-3 minutes per side, or until golden brown and crispy.
  8. Remove from the skillet and serve immediately with your favorite toppings.
