Description
Quick and easy skillet turkey wraps, perfect for a weeknight dinner! Seasoned ground turkey, black beans, and veggies cooked in one skillet, then wrapped in warm tortillas with cheese.

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 8 large flour tortillas
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado, cilantro
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up, until browned. Drain excess grease.
- Add the chopped onion and bell pepper to the skillet with the turkey. Cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute.
- Add black beans, diced tomatoes and green chilies, chili powder, cumin, smoked paprika, salt, and pepper. Simmer for 5-10 minutes, stirring occasionally.
- Warm the tortillas in a microwave or dry skillet for a few seconds until pliable.
- Spoon the turkey mixture onto each tortilla, and top with shredded cheddar cheese.
- Fold in the sides of the tortilla, then roll it up tightly.
- Return the filled wraps to the skillet, seam side down. Cook for about 2-3 minutes per side, or until golden brown and crispy.
- Remove from the skillet and serve immediately with your favorite toppings.
