Tender and flavorful slow cooker beef bowl perfect for a weeknight dinner. Serve over rice with your favorite toppings!

- 2 pounds chuck roast, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 jalapeno, seeded and minced (optional)
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained (such as Rotel)
- 1 cup beef broth
- 1/4 cup tomato paste
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Cooked rice, quinoa, or cauliflower rice
- Toppings of your choice: shredded cheese, sour cream, avocado, salsa, cilantro, green onions, lime wedges
Instructions
- Pat the beef cubes dry with paper towels. Season with salt and pepper.
- Heat the olive oil in a large skillet over medium high heat. Sear the beef in batches, 2 to 3 minutes per side, until browned. This step enhances the flavor, so don’t skip it!
- Transfer the seared beef to the slow cooker.
- In the same skillet, add the chopped onion, garlic, bell pepper, and jalapeno (if using). Cook until softened, about 5 minutes.
- Add the diced tomatoes, diced tomatoes and green chilies, beef broth, tomato paste, chili powder, cumin, smoked paprika, and cayenne pepper (if using) to the skillet. Stir to combine and bring to a simmer.
- Pour the sauce over the beef in the slow cooker.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is very tender and easily shreds with a fork.
- Shred the beef directly in the slow cooker with two forks.
- Serve a generous portion of the tender beef over your choice of rice, quinoa or cauliflower rice.
- Top it with your favorite toppings, such as shredded cheese, sour cream, avocado, salsa, cilantro, green onions, and lime wedges.
