- 2 pounds beef chuck, cut into 1-inch cubes
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Cooked rice, for serving
- Optional toppings: shredded cheese, sour cream, green onions, avocado
Instructions
- Season the beef cubes generously with salt and pepper.
- In a large skillet, brown the beef on all sides over medium heat.
- Transfer the browned beef to your slow cooker.
- Add the chopped onion, minced garlic, and chopped bell pepper to the slow cooker.
- Pour in the diced tomatoes (undrained), beef broth, tomato paste, Worcestershire sauce, smoked paprika, and dried oregano.
- Stir everything together to ensure the beef is coated in the sauce.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is very tender.
- Once the beef is cooked, shred it with two forks.
