  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Optional toppings: shredded cheese, sour cream, green onions, avocado

Instructions

  1. Season the beef cubes generously with salt and pepper.
  2. In a large skillet, brown the beef on all sides over medium heat.
  3. Transfer the browned beef to your slow cooker.
  4. Add the chopped onion, minced garlic, and chopped bell pepper to the slow cooker.
  5. Pour in the diced tomatoes (undrained), beef broth, tomato paste, Worcestershire sauce, smoked paprika, and dried oregano.
  6. Stir everything together to ensure the beef is coated in the sauce.
  7. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is very tender.
  8. Once the beef is cooked, shred it with two forks.
