Description

Tender shredded beef cooked in a slow cooker with taco seasoning and tomatoes, then wrapped in tortillas with your favorite toppings. A delicious and easy meal!


Ingredients

  • 3 pounds chuck roast, trimmed of excess fat
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel tomatoes
  • 1 (1 ounce) packet taco seasoning
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • 10 large flour tortillas
  • Shredded cheddar cheese, for topping
  • Sour cream, for topping
  • Guacamole, for topping (optional)
  • Salsa, for topping
  • Shredded lettuce, for topping
  • Chopped cilantro, for garnish

Instructions

  1. 1. Season the chuck roast generously with salt and pepper.
  2. 2. In a large skillet, sear the beef on all sides until browned.
  3. 3. Transfer the seared beef to the slow cooker.
  4. 4. Add the chopped onion and minced garlic to the slow cooker.
  5. 5. Pour in the diced tomatoes (undrained), Rotel tomatoes, beef broth, taco seasoning, chili powder, cumin, smoked paprika, and cayenne pepper (if using).
  6. 6. Stir everything together to ensure the beef is coated with the sauce.
  7. 7. Cover and cook on low for 8 10 hours, or on high for 4 5 hours, or until the beef is very tender and easily shreds with a fork.
  8. 8. Once cooked, remove the beef from the slow cooker and shred it using two forks.
  9. 9. Return the shredded beef to the slow cooker to soak up the juices.
  10. 10. Warm tortillas slightly.
  11. 11. Fill each tortilla with a generous amount of the slow cooker shredded beef.
  12. 12. Top with your favorite toppings like shredded cheese, sour cream, guacamole, salsa, shredded lettuce, and cilantro.
  13. 13. Fold the sides of each tortilla and then roll it up tightly to create a wrap.
  14. 14. Serve immediately.
