Description

- 3 pounds chuck roast, trimmed of excess fat
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can Rotel tomatoes
- 1 (1 ounce) packet taco seasoning
- 1 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and pepper to taste
- 10 large flour tortillas
- Shredded cheddar cheese, for topping
- Sour cream, for topping
- Guacamole, for topping (optional)
- Salsa, for topping
- Shredded lettuce, for topping
- Chopped cilantro, for garnish
Instructions
- 1. Season the chuck roast generously with salt and pepper.
- 2. In a large skillet, sear the beef on all sides until browned.
- 3. Transfer the seared beef to the slow cooker.
- 4. Add the chopped onion and minced garlic to the slow cooker.
- 5. Pour in the diced tomatoes (undrained), Rotel tomatoes, beef broth, taco seasoning, chili powder, cumin, smoked paprika, and cayenne pepper (if using).
- 6. Stir everything together to ensure the beef is coated with the sauce.
- 7. Cover and cook on low for 8 10 hours, or on high for 4 5 hours, or until the beef is very tender and easily shreds with a fork.
- 8. Once cooked, remove the beef from the slow cooker and shred it using two forks.
- 9. Return the shredded beef to the slow cooker to soak up the juices.
- 10. Warm tortillas slightly.
- 11. Fill each tortilla with a generous amount of the slow cooker shredded beef.
- 12. Top with your favorite toppings like shredded cheese, sour cream, guacamole, salsa, shredded lettuce, and cilantro.
- 13. Fold the sides of each tortilla and then roll it up tightly to create a wrap.
- 14. Serve immediately.
