Description
This slow cooker chicken casserole is comfort food at its finest! Tender chicken and vegetables in a creamy sauce, topped with buttery Ritz crackers. Easy to make and perfect for a weeknight meal.

- 2 pounds boneless, skinless chicken breasts
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 1 (10 ounce) package frozen peas
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1/2 cup sour cream
- 1/4 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup crushed Ritz crackers
- 4 tablespoons melted butter
Instructions
- Place the chicken breasts in the bottom of your slow cooker.
- Add the chopped carrots, celery, and onion on top of the chicken.
- In a separate bowl, whisk together the condensed cream of chicken soup, sour cream, milk, garlic powder, salt, and pepper. Pour this mixture over the chicken and vegetables.
- Cover and cook on low for 6 8 hours, or on high for 3 4 hours, or until the chicken is cooked through and easily shreds with a fork.
- About 30 minutes before serving, stir in the frozen peas.
- In a small bowl, combine the crushed Ritz crackers and melted butter.
- Sprinkle the cracker mixture evenly over the top of the casserole.
- Cover and continue cooking for another 15-20 minutes, or until the topping is golden brown and crispy. Serve hot.
