Description
A delicious and easy slow cooker chicken rice bowl that is perfect for a weeknight meal. Tender chicken, fluffy rice, and your favorite toppings all in one pot!

- 2 pounds boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 (10 ounce) can diced tomatoes and green chilies (like Rotel)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Your favorite toppings (cheese, sour cream, avocado, cilantro, etc.)
Instructions
- 1. Place the chicken breasts in the slow cooker.
- 2. Add the diced onion, minced garlic, diced bell pepper, and diced tomatoes and green chilies to the slow cooker.
- 3. Sprinkle the chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper over the chicken and vegetables.
- 4. Pour the chicken broth over the mixture.
- 5. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, or until the chicken is cooked through
- 6. Remove the chicken from the slow cooker and shred it with two forks.
- 7. Stir the rice into the slow cooker. If the mixture seems too dry, you can add a little more broth.
- 8. Cover and cook for another 30 to 45 minutes, or until the rice is tender. Stir occasionally.
- 9. Serve hot, topped with cheese, sour cream, avocado, cilantro, and other desired toppings.
