Description

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 (10 ounce) can diced tomatoes and green chilies (like Rotel)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Your favorite toppings (cheese, sour cream, avocado, cilantro, etc.)

Instructions

  1. 1. Place the chicken breasts in the slow cooker.
  2. 2. Add the diced onion, minced garlic, diced bell pepper, and diced tomatoes and green chilies to the slow cooker.
  3. 3. Sprinkle the chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper over the chicken and vegetables.
  4. 4. Pour the chicken broth over the mixture.
  5. 5. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, or until the chicken is cooked through
  6. 6. Remove the chicken from the slow cooker and shred it with two forks.
  7. 7. Stir the rice into the slow cooker. If the mixture seems too dry, you can add a little more broth.
  8. 8. Cover and cook for another 30 to 45 minutes, or until the rice is tender. Stir occasionally.
  9. 9. Serve hot, topped with cheese, sour cream, avocado, cilantro, and other desired toppings.
