- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth (or vegetable broth)
- 1/4 cup soy sauce (low sodium)
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- 1/2 teaspoon red pepper flakes (optional)
- Cooked rice, for serving
- Optional toppings: green onions, sesame seeds, sriracha mayo
Instructions
- In the slow cooker, combine the bell peppers, red onion, garlic, diced tomatoes, chicken broth, soy sauce, rice vinegar, sesame oil, ginger, and red pepper flakes (if using).
- Gently nestle the cod fillets into the vegetable mixture in a single layer.
- Cover and cook on low for 2 3 hours, or until the cod is cooked through and flakes easily with a fork. Cooking time may vary depending on your slow cooker.
- Serve the slow cooker cod and vegetables over cooked rice.
- Garnish with your favorite toppings, such as green onions, sesame seeds, and sriracha mayo.
