  • 1/2 cup chicken broth (or vegetable broth)
  • 1/4 cup soy sauce (low sodium)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • Cooked rice, for serving
  • Optional toppings: green onions, sesame seeds, sriracha mayo

Instructions

  1. In the slow cooker, combine the bell peppers, red onion, garlic, diced tomatoes, chicken broth, soy sauce, rice vinegar, sesame oil, ginger, and red pepper flakes (if using).
  2. Gently nestle the cod fillets into the vegetable mixture in a single layer.
