Ingredients

  • 1.5 lbs cod fillets, fresh or frozen (thawed)
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup salsa
  • 1 lime, juiced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1012 flour tortillas, warmed
  • Optional toppings: shredded lettuce, avocado slices, sour cream, shredded cheese

Instructions

  1. In your slow cooker, add the bell peppers and onion. This creates a delicious base for the cod to cook on.
  2. Place the cod fillets on top of the vegetables.
  3. Pour the diced tomatoes and salsa over the cod. Squeeze the lime juice over everything.
  4. Sprinkle the chili powder, cumin, garlic powder, salt, and pepper evenly over the cod and vegetables.
  5. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, or until the fish is cooked through and flakes easily with a fork.
  6. Once cooked, gently shred the cod with a fork. Stir the shredded cod into the vegetable and sauce mixture.
  7. Warm the tortillas. Spoon the slow cooker cod mixture into each tortilla.
  8. Add your favorite toppings, such as shredded lettuce, avocado slices, sour cream, and shredded cheese.
  9. Serve immediately.
