  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 pound pasta (penne, rotini, or your favorite)
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, oregano, and red pepper flakes (if using) and cook for another minute until fragrant.
  2. Pour the cooked onion and garlic mixture into the slow cooker. Add the crushed tomatoes and tomato sauce. Stir to combine.
  3. Gently nestle the salmon pieces into the tomato sauce mixture in the slow cooker.
  4. Cover the slow cooker and cook on low for 2-3 hours, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary depending on your slow cooker, so check after 2 hours.
  5. About 30 minutes before serving, cook the pasta according to package directions until al dente.
  6. Once the salmon is cooked, stir in the heavy cream and Parmesan cheese into the slow cooker. Season with salt and black pepper to taste.
  7. Drain the cooked pasta and add it directly to the slow cooker with the salmon sauce. Gently toss to combine, ensuring the pasta is coated evenly.
  8. Garnish with fresh parsley before serving.
