- 1.5 pounds salmon fillets, skin off, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1 pound pasta (penne, rotini, or your favorite)
- Fresh parsley, chopped for garnish
Instructions
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, oregano, and red pepper flakes (if using) and cook for another minute until fragrant.
- Pour the cooked onion and garlic mixture into the slow cooker. Add the crushed tomatoes and tomato sauce. Stir to combine.
- Gently nestle the salmon pieces into the tomato sauce mixture in the slow cooker.
- Cover the slow cooker and cook on low for 2-3 hours, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary depending on your slow cooker, so check after 2 hours.
- About 30 minutes before serving, cook the pasta according to package directions until al dente.
- Once the salmon is cooked, stir in the heavy cream and Parmesan cheese into the slow cooker. Season with salt and black pepper to taste.
- Drain the cooked pasta and add it directly to the slow cooker with the salmon sauce. Gently toss to combine, ensuring the pasta is coated evenly.
- Garnish with fresh parsley before serving.
