Easy and delicious slow cooker tuna wraps. A delicious and convenient meal that’s perfect for busy weeknights.

- 2 (5 ounce) cans tuna in water, drained
- 1/2 cup mayonnaise
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 2 tablespoons sweet pickle relish
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
- Pinch of salt
- 1/2 cup vegetable broth
- 6 burrito size flour tortillas
- Optional toppings: avocado slices, shredded lettuce, chopped tomatoes, sprouts and / or fresh cilantro and sriracha
Instructions
- In a medium bowl, gently flake the drained tuna with a fork. Be careful not to mash it.
- Add the mayonnaise, celery, red onion, sweet pickle relish, Dijon mustard, lemon juice, salt, and pepper to the bowl with the tuna.
- Lightly incorporate all the ingredients being careful to handle all the ingredients gently
- Spray the inside of your slow cooker with nonstick cooking spray. Place the tuna mixture into the slow cooker and add the vegetable broth.
- Cover and cook on low for 2 hours, or on high for 1 hour.
- Once cooked, give the tuna mixture a gentle stir.
- Warm the tortillas in a skillet or microwave.
- Spoon the tuna mixture into the warmed tortillas, add your favorite toppings.
- Taste, adjust spices as needed, roll up and serve immediately.
