Slow Cooker Tuna Wraps: The Easiest Weeknight Dinner

Description

Easy and delicious slow cooker tuna wraps. A delicious and convenient meal that’s perfect for busy weeknights.


Ingredients

  • 2 (5 ounce) cans tuna in water, drained
  • 1/2 cup mayonnaise
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • Pinch of salt
  • 1/2 cup vegetable broth
  • 6 burrito size flour tortillas
  • Optional toppings: avocado slices, shredded lettuce, chopped tomatoes, sprouts and / or fresh cilantro and sriracha

Instructions

  1. In a medium bowl, gently flake the drained tuna with a fork. Be careful not to mash it.
  2. Add the mayonnaise, celery, red onion, sweet pickle relish, Dijon mustard, lemon juice, salt, and pepper to the bowl with the tuna.
  3. Lightly incorporate all the ingredients being careful to handle all the ingredients gently
  4. Spray the inside of your slow cooker with nonstick cooking spray. Place the tuna mixture into the slow cooker and add the vegetable broth.
  5. Cover and cook on low for 2 hours, or on high for 1 hour.
  6. Once cooked, give the tuna mixture a gentle stir.
  7. Warm the tortillas in a skillet or microwave.
  8. Spoon the tuna mixture into the warmed tortillas, add your favorite toppings.
  9. Taste, adjust spices as needed, roll up and serve immediately.
