  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/3 cup freshly squeezed lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon lemon zest
  • Toppings:
  • 1 cup assorted fresh berries (strawberries, raspberries, blueberries), sliced
  • Powdered sugar for dusting

Instructions

  1. Make the Taco Shells: In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. In a separate small bowl, whisk together the egg and vanilla extract. Add the egg mixture to the flour mixture and mix until a dough forms.
  3. Divide the dough into 6 equal portions. Roll each portion into a thin circle (about 4 inches in diameter).
  4. Carefully drape each dough circle over the handle of a wooden spoon or a taco mold to create a taco shape.
  5. Bake at 350°F (175°C) for 10 to 12 minutes, or until golden brown. Let cool completely on a wire rack.
  6. Prepare the Lemon Filling: In a medium bowl, whisk together sugar, flour, baking powder, and salt.
  7. In a separate bowl, whisk together eggs, lemon juice, lemon zest, and melted butter. Add the wet ingredients to the dry ingredients and mix until smooth.
  8. Pour the lemon filling into a small saucepan. Cook over medium heat, stirring constantly, until the filling thickens to a pudding like consistency (about 5 to 7 minutes). Remove from heat and let cool slightly.
  9. Assemble the Tacos: Fill each taco shell with the lemon filling.
